Taco Frittata

Taco Frittata

A quick meal idea, and a great way to use leftover cooked ground beef or taco meat. 

Ingredients:

1lb ground beef
taco seasoning (use a pre-made pack or make your own spice mix - there are lots of easy recipes online)
1 T olive oil 
1/2 medium onion, chopped
1 jalapeno, chopped
8 large eggs
1/4 cup milk or cream
salt and pepper, to taste
6 oz grated cheese
taco toppings of your choice: cilantro, lettuce, tomato, peppers, avocado, salsa, etc. 

Instructions:

Preheat oven to 350F. In a 12" cast iron skillet, cook beef until no longer pink. Add onion and jalapeno and cook until softened. Add taco seasoning and 1/4 cup of water and simmer until water is gone. 

Whisk eggs and cream. Season with salt and pepper. Put 1/2 of cheese on beef. Pour in egg mixture and spread evenly and then put other 1/2 of cheese on top. 

Bake 350F for 15-20 minutes or until set. Let stand 5 minutes. Top with your choice of toppings and serve.
