Greek spinach and feta meatloaf

A meatloaf recipe with a Greek twist. I doubled the ingredients and made 2 meatloaves so I'd have leftovers! I also used ground flax instead of bread crumbs (just because I had it on hand!) and it turned out great.

Ingredients
- (1 tsp) Olive oil
- (2 cloves) Garlic
- (4 cups) Spinach
- (1.25 lbs) Lean Ground Beef
- (1/2 cup) Feta cheese
- (1/3 cup) Bell peppers (diced)
- (1/4 cup) Onion
- (1/3 cup) Bread crumbs
- (1) Egg
- (1/2 tsp each) Oregano, parsley, thyme, salt and pepper
- (1/4 cup plus 2 T) Tomato sauce
Directions
Cook oil, garlic and spinach together in a skillet until spinach is cooked.
Mix all ingredients together, including spinach mixture (leave out 2 T of tomato sauce). Spread extra 2 T of tomato sauce on top.
Bake in 400 F oven for 40-50 minutes. Let rest 5-10 minutes before serving.
