Oven-baked beef short ribs

Beef short ribs, baked in a rich sauce, packed with veggies. Allow plenty of time for this recipe to cook in the oven, so that the beef is tender and falling off the ribs.

  • (4-6 lbs) beef short ribs
  • (2 Tbsp) olive oil
  • (1 cup) celery, choppped
  • (1.5 cups) carrots, chopped
  • (1 cup) onion, chopped
  • (2 cloves) garlic
  • (1/3 cup) flour
  • (1/2 cup) red wine
  • (2 cups) beef broth
  • (2 Tbsp) tomato paste


Season all sides of ribs with salt and pepper. Put olive oil in pot, heat and sear ribs to brown all sides. Move to a large baking dish.
Rough chop veggies and food process until fine pieces. Add to skillet beef was in and cook a few minutes until tender. Add 1/3 cup flour and stir 2-3 minutes. Add wine, broth and tomato paste and simmer a few more minutes until mixed and a bit thickened.
Add sauce to ribs.
Bake in slow over 325 for 2-2 ½ hours.
