Beef bone broth

Make your own, healthy bone broth! For best results, use a combination of bones that contain marrow and collagen. A mix of oxtail, shanks or short ribs, and knuckle bones gives you the collagen, and some extra meat for making beefy soups. Add your own fresh herbs or dried herbs to add extra flavour if you prefer. Expect this bone broth to be gelatinous once it cools if done right.

Ingredients
(3-4 lbs) Mixed beef bones
(1) onion, closely chopped
(4 stalks) celery, stalks and leaves, coarsely chopped
(2) carrots, coarsely chopped
(2) bay leaves
(1 tsp) black peppercorns
(to taste) salt
(4) garlic cloves, coarsely chopped

Directions

  1. Roast bones at 450 degrees fahrenheit for 20-30 minutes or until really well browned.

  2. Place bones in water, just to cover and add other ingredients. Cover and simmer on low for at least 8 hours (or for as long as 24 hours). Let cool slightly, and then strain through a fine mesh strainer.

  3. Cool broth well and store in containers in the fridge or for up to 6 months in the freezer.
