Greek spinach and feta meatloaf

A meatloaf recipe with a Greek twist. I doubled the ingredients and made 2 meatloaves so I'd have leftovers! I also used ground flax instead of bread crumbs (just because I had it on hand!) and it turned out great.

Cook Time: 1 hour
Servings: 4-6


Ingredients
(1 tsp) Olive oil
(2 cloves) Garlic
(4 cups) Spinach
(1.25 lbs) Lean Ground Beef
(1/2 cup) Feta cheese
(1/3 cup) Bell peppers (diced)
(1/4 cup) Onion
(1/3 cup) Bread crumbs
(1) Egg
(1/2 tsp each) Oregano, parsley, thyme, salt and pepper
(1/4 cup plus 2 T) Tomato sauce


Directions

  1. Cook oil, garlic and spinach together in a skillet until spinach is cooked.

  2. Mix all ingredients together, including spinach mixture (leave out 2 T of tomato sauce). Spread extra 2 T of tomato sauce on top.

  3. Bake in 400 F oven for 40-50 minutes. Let rest 5-10 minutes before serving.
