Pumpkin & Honey Muffins


1 ½ cups all purpose flour (or use some or all whole wheat flour)
1 ½ tsp baking powder
1 tsp baking soda
½ tsp salt
1 tsp cinnamon
½ tsp ginger
½ tsp nutmeg
¼ cup butter, softened
1/2 cup honey
1 egg
1 cup pumpkin puree or canned pumpkin
½ cup mini chocolate chips

Preheat oven to 350°F. Line muffin tins with paper liners.
In a medium bowl, mix the flour, baking powder, baking soda, salt, cinnamon, ginger and nutmeg until combined. Set aside.
Beat butter and then add honey, egg and pumpkin and beat until combined.
Slowly mix in the flour mixture.
Add mini chocolate chips (save some to put on top if you like).
Scoop the batter into the muffin cups and sprinkle (if you'd like) with chocolate chips.
Bake for 20-25 minutes until toothpick comes out clean when inserted. Remove muffins and place on cooling rack.
